Mine would be Breakdown, a movie I watched recently and mentioned in another thread. It's a thriller but I think it could classify as an action movie also.

Unlike other actors and movie directors, he does all. He coordinates, he directs and he acts by himself. He also does his stunt and he almost died once. He broke his bone close to 100 times. Quality he delivers is just amazing.
